the trace amounts of alcohol in kimchi is very low when fermented, the only time that it becomes Haram is that the more sour the kimchi is, the higher alcohol rises during fermentation. there are Halal kimchis meaning, that the fermentation process was shorter, in some stores there are Halal certified kimchis.
